Collards
Kale
Bok Choy
Broccoli Rabe
Napa cabbage
Dandelion
Swiss chard
Mustards
Beet greens and turnip greens
Spinach
Watercress
Arugula
Lettuce varieties

Lettuce, chard and spinach are mild in flavor while other greens — like arugula, dandelion and mustards — are sharp, peppery and bitter.
